I am a solder newbie, never done it before. I am getting ready to
start rebuilding an old strat copy, and I'll need to do some soldering.
What wattage/style of gun do I need for typical guitar and amp stuff?

I've found that butane-powered ones are very easy to use. A couple of
different electricians have been fixing wiring in our house recently, and
both used them. They get hot almost instantly, have a very wide range of
heat settings and are light and cordless. You can also get a wide range of
tips for them, including mini blowtorch and heat gun. Mine is an Iroda.
One bit of advice if you get one - don't leave it running hot when not in
use, it will wreck the tip. I leave mine running very low, and turn it up
when needed. Also, I have a small glass screw top jar full of wet cloth at
my soldering station for keeping it clean.

My nephew just bought one of those guns from Radio Shack that is cold to
the touch.... He's in love with that thing.... It's like 'Solder and
Gamorrah' at his house :)
Seriously, he really likes it and says it heats better than his traditional
ones.

Actually, a gun is generally what you don't want; guns put out quite a lot
of heat and can quickly cook a pot. You want a moderate-output iron.
Something like a Weller WE-WP25 or WE-WP35 is sufficient. These are 25 and
35 watts. Guns are often over 200 watts.
You can get gas irons, often butane powered, and they work well, but you do
need to be aware that they use a flame to heat the tip; that means that
there's a vent, which is quite capable of melting whatever is in front of
it.. like the finish on your guitar or the insulation on the wiring.

I have one of the "Cold Heat" soldering guns. They are sold at Radio Shack
for about $20.
For light-duty stuff, it works amazing well. For heavy wiring (I'd say 16ga
and higher), it's not so great.
Where it works, it's amazing. Where it doesn't, it's frustrating.
For most small electronics it works well.
Other than that, you can't beat a Weller temperature controlled station.
Yes, it will cost a bit more but it's massively better than those fire-place
starters that pass as some soldering irons.

Yep, that would be the "Cold Heat" gun I spoke of. Runs on batteries.

I broke that thing within ten minutes of turning it on. Really cheap.

Don't get a gun, get a
conventional iron in
the 25-40 watt range
-- I've never
encountered any work
on an electric guitar
that I couldn't do
with something simple
and inexpensive like a
Weller SP-23. Pros
need better tools, but
for doing your own
occasional repairs and
upgrades a typical,
garden variety iron is
entirely adequate.

The SP-23 or SP-40 is a good choice, (I'd get the 40), A Screwdriver
Tip is also useful, since it can heat up a wide area faster (it works
good for heating up the body of a pot for grounding) See the MT-2 tip
for the SP series on this page:

(if you get the SP-23 kit you get a the MT-1 and MT-2 tips), the SP-40
come with a wider tip which is good for guitar work, but you'd then
would want a pencil tip for Amp/electronics work - ahh the decisions).
Now if you want to spend $70 on a iron I like my rechargable Wahl
Iso-Tip 60, but you really need the Heavy Duty or Chisel tip for that
iron to do guitar work. But you don't have the cord in the way and if
you keep it charged you don't have to wait for it to heat up. If you
only solder once a year or so go with the SP-40 or 23
